This tender and flavorful bread combines cottage cheese and fresh dill for a delightful homemade treat.

Ingredients

Dry ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Wet ingredients

  • 1 cup cottage cheese
  • 2 large eggs (beaten)
  • 1 tablespoon honey
  • 4 tablespoons butter (melted)
  • 2 tablespoons fresh dill (finely chopped)

Instructions 

  • Preheat oven to 350°F (175°C). Spray a loaf pan with nonstick spray.
  • Mix dry ingredients in a bowl. In another bowl, combine cottage cheese, eggs, honey, and melted butter until smooth.
  • Stir chopped dill into wet mixture, then fold in dry ingredients until just combined.
  • Spread batter into the prepared loaf pan and smooth the top.
  • Bake for 35-40 minutes until golden. Cool before slicing.

Notes

This bread is best enjoyed fresh and can be stored in an airtight container for a couple of days.
