Ingredients

Dough

  • 3 tbsp Unsalted Butter
  • 2 tbsp Egg Whites
  • 0.75 cup Swolverine's Vanilla Whey Protein Isolate
  • 0.25 cup Dry Lemon Pudding Mix (Jell-O)
  • 0.5 tsp Truvia Baking Blend (optional)
  • 0.25 tsp Baking Powder
  • 0.5 scoop Swolverine's Vanilla Whey Protein Isolate (for icing)
  • 1 tbsp Powdered Sugar (for icing)
  • to taste for icing Milk (for consistency)
  • 1 unit Zest of 1 Lemon (for icing)

Instructions 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix all ingredients for the dough until well combined. Form into 8 balls and place on the sheet.
  • Bake for 4-6 minutes until edges are lightly brown. Let cool slightly.
  • Mix icing ingredients and drizzle over cooled cookies.

Notes

Be careful not to overbake to keep cookies soft and chewy.
