Instructions
Preheat oven to 350°F (175°C). Soften cold butter in microwave for 10-15 seconds.
Cream softened butter with brown and granulated sugars until mixture resembles thick sand, about 2-3 minutes.
Add eggs and vanilla, beat until well combined. In a separate bowl, mix flour, oats, cinnamon, salt, and baking soda.
Gradually add dry ingredients to the wet mixture on low speed. Before dough thickens, fold in raisins.
Line baking sheet with parchment or silicone mat. Scoop dough onto sheet, 2 inches apart. Bake for 11-13 minutes.
Cool cookies on baking sheet for 5-10 minutes, then transfer to wire rack. Store in an airtight container.
Notes
For softer cookies, slightly underbake. Store in an airtight container to maintain freshness.
