Ingredients

Butter

  • 1 cup unsalted butter (cold)
  • 1.5 cups light brown sugar (packed)
  • 0.5 cup granulated sugar (95g)
  • 2 large eggs
  • 1 tablespoon pure vanilla extract (15ml)
  • 2 cups all-purpose flour
  • 1.5 cups old-fashioned rolled oats (120g)
  • 1 tablespoon ground cinnamon (7g)
  • 1 teaspoon salt (5g)
  • 0.5 teaspoon baking soda
  • 2 cups raisins (approximately 10 oz)

Instructions 

  • Preheat oven to 350°F (175°C). Soften cold butter in microwave for 10-15 seconds.
  • Cream softened butter with brown and granulated sugars until mixture resembles thick sand, about 2-3 minutes.
  • Add eggs and vanilla, beat until well combined. In a separate bowl, mix flour, oats, cinnamon, salt, and baking soda.
  • Gradually add dry ingredients to the wet mixture on low speed. Before dough thickens, fold in raisins.
  • Line baking sheet with parchment or silicone mat. Scoop dough onto sheet, 2 inches apart. Bake for 11-13 minutes.
  • Cool cookies on baking sheet for 5-10 minutes, then transfer to wire rack. Store in an airtight container.

Notes

For softer cookies, slightly underbake. Store in an airtight container to maintain freshness.
