These delightful cookies combine pumpkin, oats, and warm spices for a soft, chewy treat perfect for fall or any time you crave a comforting dessert.

Ingredients

Dry ingredients

  • 1 cup all-purpose flour (spooned & leveled)
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet ingredients

  • 1/2 cup unsalted butter (softened to room temperature)
  • 1/2 cup brown sugar (lightly packed)
  • 1/4 cup granulated sugar
  • 1 large egg yolk (room temperature)
  • 1 teaspoon vanilla extract
  • 1/3 cup pumpkin puree (squeeze out excess moisture with paper towels)
  • 1 1/2 cups old-fashioned rolled oats

Instructions 

  • Whisk together dry ingredients in a large bowl and set aside.
  • Cream butter and sugars, then add egg yolk and vanilla, mixing until combined. Mix in pumpkin puree.
  • Gradually add dry ingredients, then fold in oats until just combined.
  • Refrigerate dough for 30 minutes, then scoop onto baking sheets, flatten slightly, and bake at 350°F (180°C) for 9-12 minutes.
  • Cool cookies on baking sheet for 5 minutes, then transfer to wire racks to cool completely.

Notes

Chill the dough for easier handling and better flavor development.
