Instructions
Whisk together dry ingredients in a large bowl and set aside.
Cream butter and sugars, then add egg yolk and vanilla, mixing until combined. Mix in pumpkin puree.
Gradually add dry ingredients, then fold in oats until just combined.
Refrigerate dough for 30 minutes, then scoop onto baking sheets, flatten slightly, and bake at 350°F (180°C) for 9-12 minutes.
Cool cookies on baking sheet for 5 minutes, then transfer to wire racks to cool completely.
