Southern Maple Sweet Potato Casserole

A comforting and flavorful casserole combining sweet potatoes, warm spices, and a sweet maple glaze topped with marshmallows and pecans.

Ingredients

Sweet Potatoes

  • 4 large organic sweet potatoes, peeled + cubed
  • 2-3 Tbsps extra virgin olive oil
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.5 cup Almond milk (You can use whole milk or your fave plant-based milk)
  • 2 tsps vanilla extract
  • 4 Tbsps unsalted butter, cubed into small pieces
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 0.125 tsp ground nutmeg
  • Pinch ground allspice
  • 1 cup organic raisins, soaked + drained (See Notes!)
  • 2 cups marshmallows
  • 1.5 cups raw pecans
  • 1/4 cup pure maple syrup

Instructions 

  • Preheat oven to 375°F (190°C). Boil sweet potatoes until tender, then mash.
  • Mix mashed sweet potatoes with spices, milk, vanilla, butter, sugar, and maple syrup.
  • Spread mixture in a baking dish, top with raisins, marshmallows, and pecans.
  • Bake for 30-40 minutes until marshmallows are golden and topping is bubbly.
  • Serve warm and enjoy!

Notes

For extra flavor, toast pecans before adding to the casserole.
