Delight in these crispy, sweet honey butter cornbread poppers, perfect for sharing at gatherings or as a flavorful snack.

Ingredients

Dry ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Wet ingredients

  • 1 cup buttermilk
  • 2 large eggs
  • ¼ cup unsalted butter, melted

Add-ins

  • ½ cup canned corn (drained)
  • cup finely diced red bell pepper
  • 1 tablespoon finely chopped jalapeño (optional)
  • 2 tablespoons chopped fresh parsley
  • ¼ cup unsalted butter (for glaze)
  • 2 tablespoons honey
  • ¼ teaspoon smoked paprika (optional)

Instructions 

  • Preheat oven to 400°F (200°C). Line or grease a 9x9-inch pan.
  • Mix dry ingredients in a bowl. Whisk wet ingredients separately, then combine.
  • Fold in corn, peppers, jalapeño, and parsley. Pour into pan and bake 22–25 minutes.
  • Cool for 10 minutes, then slice into rectangles. Make honey butter glaze and sear cornbread pieces until golden.
  • Brush glaze over the poppers and garnish with parsley. Serve warm.

Notes

For extra flavor, add more jalapeño or parsley as desired.
