A quick and flavorful dish combining tender chicken, fresh vegetables, and a creamy peanut sauce over noodles, perfect for a satisfying weeknight dinner.

Ingredients

Protein

  • 1.5 lbs boneless, skinless chicken breasts (diced into 1-inch pieces)
  • 1 tbsp cornstarch
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 0.25 tsp black pepper

Sauce

  • 0.5 cup creamy peanut butter (unsweetened)
  • 0.25 cup warm water
  • 3 tbsp soy sauce (low sodium)
  • 2 tbsp rice vinegar
  • 2 tbsp honey or maple syrup
  • 1 tbsp lime juice (fresh)
  • 1 tbsp fresh ginger (grated)
  • 1 clove garlic (minced)
  • 1 tsp Sriracha (or to taste)
  • 0.5 tsp sesame oil

Noodles

  • 8 oz linguine or spaghetti noodles
  • 1 tbsp vegetable oil

Vegetables

  • 1 cup red bell pepper (thinly sliced)
  • 1 cup broccoli florets (small)
  • 0.5 cup shredded carrots
  • 0.25 cup chopped peanuts (roasted)
  • 2 tbsp fresh cilantro (chopped)
  • 1 lime cut into wedges

Instructions 

  • Cook noodles according to package instructions; drain and set aside.
  • Mix peanut butter, water, soy sauce, rice vinegar, honey, lime juice, ginger, garlic, Sriracha, and sesame oil to make the sauce.
  • Heat vegetable oil in a large skillet; cook diced chicken until browned and cooked through.
  • Add vegetables to the skillet; stir-fry until tender-crisp. Mix in cooked noodles and sauce; toss to combine.
  • Garnish with chopped peanuts, cilantro, and lime wedges before serving.

Notes

For extra flavor, add a splash of fish sauce or lime juice to the sauce.
