0.5cupcreamy peanut butter (unsweetened)
0.25cupwarm water
3tbspsoy sauce (low sodium)
2tbsprice vinegar
2tbsphoney or maple syrup
1tbsplime juice (fresh)
1tbspfresh ginger (grated)
1clovegarlic (minced)
1tspSriracha (or to taste)
0.5tspsesame oil

8ozlinguine or spaghetti noodles
1tbspvegetable oil

1cupred bell pepper (thinly sliced)
1cupbroccoli florets (small)

0.25cupchopped peanuts (roasted)
2tbspfresh cilantro (chopped)

Instructions
Cook noodles according to package instructions; drain and set aside.
Mix peanut butter, water, soy sauce, rice vinegar, honey, lime juice, ginger, garlic, Sriracha, and sesame oil to make the sauce.
Heat vegetable oil in a large skillet; cook diced chicken until browned and cooked through.
Add vegetables to the skillet; stir-fry until tender-crisp. Mix in cooked noodles and sauce; toss to combine.
Garnish with chopped peanuts, cilantro, and lime wedges before serving.
Notes
For extra flavor, add a splash of fish sauce or lime juice to the sauce.
