Ingredients

Dry Ingredients

  • 1.75 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup packed brown sugar
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon ground cloves

Wet Ingredients

  • 2 large eggs
  • 1 can (15 ounces) pumpkin puree
  • 0.5 cup vegetable oil
  • 0.25 cup orange juice
  • 1 teaspoon vanilla extract

Instructions 

  • Preheat oven to 350°F (175°C) and prepare muffin tin.
  • Mix dry ingredients in a large bowl.
  • Beat eggs and mix in wet ingredients.
  • Fold wet into dry ingredients until just combined.
  • Spoon batter into muffin tin, filling 2/3 full.
  • Bake for 18-22 minutes until a toothpick comes out clean.
