A moist and flavorful pumpkin bread infused with warm spices and sweet raisins, perfect for fall baking.

Ingredients

Pumpkin

  • 1 1/2 cups pure pumpkin puree (canned or homemade)
  • 2 large eggs
  • 1/2 cup canola oil
  • 1 cup brown sugar, packed
  • 1 tsp pure vanilla extract

Dry ingredients

  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp fresh ground black pepper
  • 1/4 tsp fresh grated nutmeg
  • 1/2 cup golden raisins

Instructions 

  • Preheat oven to 350°F (175°C). Prepare loaf pan with spray and flour or parchment.
  • Mix pumpkin, eggs, oil, sugar, and vanilla in a large bowl.
  • Combine dry ingredients in a separate bowl.
  • Mix dry into wet, fold in raisins, pour into pan.
  • Bake for 50-60 minutes, cool before slicing.
