Ingredients
Dough
2¾cupsall-purpose flour
2teaspoonscream of tartar(see notes for substitution)
1teaspoonbaking soda
½teaspoonsalt
1cupunsalted butter(at room temperature)
1cupgranulated sugar
½cuplight or dark brown sugar
2largeeggs(at room temperature)
1.5teaspoonspure vanilla extract
½cupgranulated sugar(for coating)
2teaspoonsground cinnamon
1teaspoonground ginger
½teaspoonground cardamom
¼teaspoonground cloves
¼teaspoonground nutmeg
Instructions
Whisk flour, cream of tartar, baking soda, and salt. Beat butter and sugars until fluffy, add eggs and vanilla, then combine with dry ingredients. Chill if soft.
Preheat oven to 350°F/180°C, line pans with parchment. Mix spices for coating.
Shape dough into balls, coat in spice mixture, and bake for 10-11 minutes. Cool before serving.
Notes
Chilling the dough helps cookies spread less and become thicker.
