Ingredients

Protein

  • 1 lb boneless, skinless chicken breast, cut into 1/2-inch strips
  • 1 tbsp olive oil
  • 1 tbsp chipotle peppers in adobo sauce, minced
  • 1 tsp cumin
  • 0.5 tsp garlic powder
  • 0.25 tsp salt
  • 0.125 tsp black pepper

Tortillas

  • 8 small corn or flour tortillas

Toppings

  • 0.5 cup shredded lettuce
  • 0.25 cup chopped fresh cilantro
  • 2 tbsp plain Greek yogurt or sour cream (optional)
  • Lime wedges Lime wedges, for serving

Instructions 

  • Combine chicken with olive oil, chipotle, cumin, garlic powder, salt, and pepper. Toss to coat.
  • Cook chicken in a skillet over medium-high heat for 5-7 minutes until browned and cooked through.
  • Warm tortillas in microwave or skillet until pliable.
  • Fill tortillas with chicken, then top with lettuce, cilantro, and optional yogurt. Serve with lime wedges.

Notes

For extra flavor, marinate the chicken longer or add your favorite toppings.
