Ingredients

Chicken & Marinade

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1.5-inch pieces
  • 0.33 cup honey
  • Zest and juice of 2 limes lime zest and juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1-2 teaspoons chili flakes (adjust to heat preference)
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground cumin
  • 0.75 teaspoon salt
  • 0.5 teaspoon black pepper

Optional Garnish

  • to taste fresh cilantro, chopped
  • as needed extra lime wedges
  • drizzle warm honey

Instructions 

  • Whisk honey, lime zest, lime juice, olive oil, garlic, chili flakes, paprika, cumin, salt, and pepper in a large bowl.
  • Add chicken pieces, toss to coat, cover, and marinate for at least 30 minutes.
  • If using wooden skewers, soak them in water for 30 minutes.
  • Preheat grill to medium-high, thread chicken onto skewers, and grill for 10–12 minutes, turning occasionally.
  • Remove from grill, rest for 2–3 minutes, then garnish with cilantro, lime, and honey if desired.

Notes

Marinate the chicken for maximum flavor and serve with extra lime and honey for added zest.
