A flavorful and spicy lamb stir fry served over rice with a cherry-balsamic sauce, perfect for a quick and satisfying meal.

Ingredients

Meat

  • 0.75 pound ground lamb
  • 1 teaspoon garam masala
  • 0.25 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.5 teaspoon smoked paprika
  • 2 tablespoons butter
  • 1 medium yellow onion (diced)
  • 2 cups spinach (packed and chopped)
  • 1 cup mushrooms (chopped)
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon salt
  • 0.5 teaspoon smoked paprika
  • 1 dash cayenne (optional)

Fruits & Sweeteners

  • 1 bag dark sweet cherries
  • 1 tablespoon raw and unfiltered honey
  • 2 tablespoons balsamic vinegar

Grains

  • 1 cup cooked white rice

Dairy

  • 0.5 cup feta cheese

Instructions 

  • Brown lamb in a skillet with spices, then set aside.
  • Melt butter, caramelize onions for 10-12 minutes, then add mushrooms and cook 3-4 minutes.
  • Add spinach, season, and cook until wilted. Return lamb to skillet and heat through.
  • Simmer cherries and honey for 6-8 minutes, blend until smooth, strain, then add balsamic vinegar and cook 10-14 minutes to thicken.
  • Serve stir fry over rice with sauce drizzled on top.
