Instructions
Brown lamb in a skillet with spices, then set aside.
Melt butter, caramelize onions for 10-12 minutes, then add mushrooms and cook 3-4 minutes.
Add spinach, season, and cook until wilted. Return lamb to skillet and heat through.
Simmer cherries and honey for 6-8 minutes, blend until smooth, strain, then add balsamic vinegar and cook 10-14 minutes to thicken.
Serve stir fry over rice with sauce drizzled on top.
