A flavorful and spicy ramen featuring miso, mushrooms, and a rich broth, perfect for a comforting meal.

Ingredients

Broth and Base

  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon sesame seeds
  • 1 teaspoon spicy chili bean sauce
  • 3 tablespoons miso paste
  • 1 tablespoon granulated sugar
  • 3 cups sliced mushrooms
  • 4 cups vegetable or chicken broth
  • 1 tablespoon sake
  • 1 teaspoon sea salt
  • 2 large eggs
  • ½ cup cooked corn, frozen or canned

Toppings

  • to taste bean sprouts
  • to taste green onions, sliced
  • to taste fried onions or scallions
  • additional black sesame seeds

Noodles

  • 2 servings noodles (Cooked according to package instructions)

Instructions 

  • Heat sesame oil in a pot, add garlic and cook until golden.
  • Add chili bean sauce, miso, sugar, and sesame seeds; cook briefly.
  • Add mushrooms and cook until softened, then pour in broth and sake; simmer.
  • Boil eggs for 7 minutes, peel, and set aside. Cook noodles separately.
  • Assemble bowls with noodles, eggs, corn, bean sprouts, pour broth, and top with green onions, scallions, and sesame seeds.

Notes

Adjust spice levels and toppings to taste for best results.
