Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Peel and cut sweet potatoes into wedges. Toss with cornstarch to coat evenly.
In a bowl, mix olive oil, Italian seasoning, garlic powder, smoked paprika, black pepper, and salt. Toss sweet potato wedges in the mixture.
Arrange wedges on the prepared baking sheet in a single layer. Roast for 20-25 minutes until crispy and golden.
