Enjoy a flavorful and spicy noodle bowl packed with fresh vegetables, shrimp, and a zesty sauce for a satisfying meal.

Ingredients

Protein

  • 1 pound raw shrimp
  • 1 cup sliced mushrooms
  • ½-¾ cup shelled edamame (adjust as preferred)
  • 1 carrot carrot, julienned
  • 1 jalapeno pepper jalapeno pepper, thinly sliced (optional for extra spice)
  • 4 oz ramen, chow mein, lo mein, or rice noodles (choose your favorite)
  • for sauteing olive oil or sesame oil
  • 3-4 cloves garlic, smashed, peeled, and minced
  • ½ lemon lemon, juiced
  • ¼ cup soy sauce
  • 3 TBSP sweet chili sauce
  • ½ tsp minced ginger or ginger paste
  • ¼ tsp crushed red pepper flakes (optional for extra spice)
  • 1 tsp cornstarch
  • 1 tsp cold water
  • for drizzling sriracha (for drizzling)
  • 2-3 TBSP fresh cilantro and/or green onions (for flavor boost)

Vegetables

  • to taste baby bok choy, snow peas, snap peas, broccoli, bean sprouts, cabbage, red bell pepper (add as desired)
  • for spicy topping chili crisp and sriracha (spicy toppings)

Instructions 

  • Cook noodles according to package instructions, then drain and set aside.
  • Heat oil in a large skillet or wok, sauté garlic and ginger until fragrant.
  • Add shrimp and vegetables, cook until shrimp is pink and vegetables are tender.
  • Mix soy sauce, sweet chili sauce, lemon juice, and red pepper flakes; stir into the skillet.
  • In a small bowl, dissolve cornstarch in cold water, then add to the skillet to thicken sauce. Serve over noodles, garnished with cilantro or green onions, and drizzle with sriracha and chili crisp if desired.
