A flavorful and easy-to-make wrap combining spicy chicken, fresh vegetables, and a creamy sauce, perfect for a quick lunch or dinner.

Ingredients

Protein

  • 2 cups cooked chicken breast, diced or shredded
  • 1 tablespoon olive oil
  • 1 tablespoon southwest seasoning
  • 1 cup canned black beans, rinsed and drained
  • 1 cup canned corn, drained
  • 1 red bell pepper red bell pepper, sliced thin
  • 1 yellow bell pepper yellow bell pepper, sliced thin
  • 0.5 cup red onion, thinly sliced
  • 1 cup chopped romaine or spinach
  • 0.25 cup fresh cilantro (optional)
  • 4 large 10-inch flour tortillas flour tortillas
  • 0.33 cup plain Greek yogurt or mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chipotle or chili powder

Instructions 

  • Cook chicken with southwest seasoning in olive oil for 4–5 minutes until warm.
  • Mix Greek yogurt, lime juice, chili powder, salt, and pepper to make sauce.
  • Warm tortillas for 10–15 seconds to soften.
  • Layer romaine, chicken, beans, corn, peppers, onions, and sauce on each tortilla, then roll up.
  • Slice and serve warm or cold.

Notes

For extra flavor, add a squeeze of lime or hot sauce before serving.
