Instructions
Preheat oven to 180°C and prepare a muffin tin with 12 liners.
Thaw spinach, drain well, and cut feta into small cubes.
Mix dry ingredients, then add wet ingredients and blend until smooth.
Fold in spinach and feta, then divide batter into liners.
Bake for 20-25 minutes. For frosting, mix cream cheese with milk until smooth, pipe over muffins, and decorate.
Notes
Ensure spinach is well drained to prevent soggy muffins.
