A delicious low-carb dish featuring tender chicken breasts filled with a flavorful spinach and cheese mixture, baked to perfection.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 5 ounces fresh spinach
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions 

  • Preheat oven to 375°F (190°C).
  • Sauté onion and garlic in olive oil until softened, then add spinach and cook until wilted. Cool slightly.
  • Mix spinach, cream cheese, mozzarella, Italian seasoning, salt, and pepper. Cut pockets into chicken breasts and stuff with filling.
  • Secure with toothpicks, place in baking dish, sprinkle Parmesan, and bake for 25-30 minutes.

Notes

Use toothpicks to secure the chicken pockets and remove before serving.
