Instructions
Preheat oven to 375°F (190°C).
Sauté onion and garlic in olive oil until softened, then add spinach and cook until wilted. Cool slightly.
Mix spinach, cream cheese, mozzarella, Italian seasoning, salt, and pepper. Cut pockets into chicken breasts and stuff with filling.
Secure with toothpicks, place in baking dish, sprinkle Parmesan, and bake for 25-30 minutes.
Notes
Use toothpicks to secure the chicken pockets and remove before serving.
