A deliciously sweet and savory chicken dish with pineapple and peppers, perfect for a quick weeknight dinner.

Ingredients

Chicken

  • 4 pieces boneless, skinless chicken thighs
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons cornstarch
  • 0.33 cup honey
  • 0.25 cup low-sodium soy sauce
  • 3 tablespoons rice vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon sriracha or chili garlic sauce
  • 1 tablespoon vegetable oil
  • 1 cup fresh pineapple chunks
  • 1 red bell pepper cut into 1-inch pieces
  • 1 green bell pepper cut into 1-inch pieces
  • 3 green onions sliced

Garnish

  • to taste sesame seeds (for garnish)

Instructions 

  • Mix honey, soy sauce, rice vinegar, garlic, ginger, and sriracha to make the glaze.
  • Sear chicken in oil until golden, then set aside. Sauté peppers and pineapple until caramelized.
  • Return chicken to skillet, pour glaze, cover, and simmer 10-12 minutes until cooked and sauce thickens.
  • Uncover and cook 2-3 minutes to reach sticky consistency. Garnish with green onions and sesame seeds. Serve hot.

Notes

For extra flavor, marinate chicken in the glaze for 30 minutes before cooking.
