Ingredients

Main

  • 1.5 pounds boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Batter

  • 0.5 cup all-purpose flour
  • 0.5 cup cornstarch
  • 1 large egg
  • 0.25 cup cold water (plus more as needed)

Sauce

  • 0.5 cup low sodium soy sauce
  • 0.5 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water (for cornstarch slurry)
  • 1 teaspoon sesame oil

Frying

  • 4 cups vegetable oil (or canola oil)

Garnish

  • 2 tablespoons toasted sesame seeds

Instructions 

  • Pat chicken dry, season with salt and pepper.
  • Mix flour, cornstarch, egg, and water to form a thick batter; coat chicken pieces.
  • Fry chicken at 325°F (160°C) until lightly golden, then drain.
  • Prepare sauce by simmering soy, honey, vinegar, ginger, garlic, and slurry until thickened; stir in sesame oil.
  • Increase oil temperature to 375°F (190°C), fry chicken again for 1-2 minutes for crispiness, then toss in sauce and garnish with sesame seeds.

Notes

Double frying ensures maximum crispiness and prevents sogginess when coated with sauce.
