Instructions
Pat chicken dry, season with salt and pepper.
Mix flour, cornstarch, egg, and water to form a thick batter; coat chicken pieces.
Fry chicken at 325°F (160°C) until lightly golden, then drain.
Prepare sauce by simmering soy, honey, vinegar, ginger, garlic, and slurry until thickened; stir in sesame oil.
Increase oil temperature to 375°F (190°C), fry chicken again for 1-2 minutes for crispiness, then toss in sauce and garnish with sesame seeds.
Notes
Double frying ensures maximum crispiness and prevents sogginess when coated with sauce.
