Instructions
Whisk together flour, cornstarch, baking soda, and salt in a medium bowl. Set aside.
Beat cream cheese until smooth, then add butter and beat until combined. Mix in sugars, then egg and vanilla until smooth.
Add dry ingredients to wet, mix on low, then fold in white chocolate chunks and strawberries. Chill dough for at least 2 hours.
Preheat oven to 350°F (177°C). Scoop heaping 1.5 tablespoons of dough onto baking sheets, 3 inches apart. Bake for 13-15 minutes until lightly browned.
Cool cookies on baking sheet for 5 minutes, then transfer to wire rack. Press additional white chocolate chunks on top if desired.
Notes
Allow dough to sit at room temperature for 30 minutes if chilled longer than a few hours for easier handling.
