Delight in these soft, buttery cookies packed with white chocolate and freeze-dried strawberries, perfect for a sweet treat.

Ingredients

Dry Ingredients

  • 281 g all-purpose flour (leveled)
  • 1.5 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 112 g cream cheese (softened to room temperature)
  • 170 g unsalted butter (softened to room temperature)
  • 100 g granulated sugar
  • 100 g brown sugar (packed light or dark)
  • 1 large egg (at room temperature)
  • 2 teaspoons vanilla extract (pure)
  • 170 g white chocolate (to yield 1 cup chunks)
  • 45 g freeze-dried strawberries (roughly chopped)

Instructions 

  • Whisk together flour, cornstarch, baking soda, and salt in a medium bowl. Set aside.
  • Beat cream cheese until smooth, then add butter and beat until combined. Mix in sugars, then egg and vanilla until smooth.
  • Add dry ingredients to wet, mix on low, then fold in white chocolate chunks and strawberries. Chill dough for at least 2 hours.
  • Preheat oven to 350°F (177°C). Scoop heaping 1.5 tablespoons of dough onto baking sheets, 3 inches apart. Bake for 13-15 minutes until lightly browned.
  • Cool cookies on baking sheet for 5 minutes, then transfer to wire rack. Press additional white chocolate chunks on top if desired.

Notes

Allow dough to sit at room temperature for 30 minutes if chilled longer than a few hours for easier handling.
