Instructions
Beat butter and sugar until combined, then add vanilla, lemon zest, and salt; beat until incorporated.
Mix in flour on low speed until dough comes together; shape into a disk, wrap, and chill for 30 minutes.
Preheat oven to 350°F, roll out dough, cut out cookies, sprinkle with sugar, and chill for 15 minutes.
Bake for 15 minutes until lightly golden; cool completely.
Make filling by melting white chocolate with salt, then whisk in heavy cream and strawberry jam; chill for 20 minutes.
Spread filling on half the cookies, top with remaining cookies, and store in an airtight container.
