Delight in these buttery cookies filled with a luscious strawberry cream, perfect for a sweet treat or special occasion.

Ingredients

Dough

  • 0.75 cup unsalted butter (at room temperature)
  • 0.5 cup sugar
  • 1 tsp vanilla bean paste or extract
  • 1 tsp lemon zest
  • 0.125 tsp salt
  • 1.75 cups flour
  • 1 Tbsp sugar for sprinkling
  • 4 oz white chocolate, chopped
  • 0.125 tsp salt
  • 2 Tbsp heavy cream
  • 3 Tbsp strawberry jam

Instructions 

  • Beat butter and sugar until combined, then add vanilla, lemon zest, and salt; beat until incorporated.
  • Mix in flour on low speed until dough comes together; shape into a disk, wrap, and chill for 30 minutes.
  • Preheat oven to 350°F, roll out dough, cut out cookies, sprinkle with sugar, and chill for 15 minutes.
  • Bake for 15 minutes until lightly golden; cool completely.
  • Make filling by melting white chocolate with salt, then whisk in heavy cream and strawberry jam; chill for 20 minutes.
  • Spread filling on half the cookies, top with remaining cookies, and store in an airtight container.

Notes

Chill the dough well for easier handling and ensure cookies are fully cooled before filling.
