Delicious and moist strawberry muffins perfect for breakfast or a snack, combining fresh fruit with wholesome ingredients.

Ingredients

Fruits

  • 1.5 cups chopped fresh strawberries

Dry ingredients

  • 0.25 cup all-purpose flour
  • 1 cup white whole wheat flour
  • 4 tablespoons unsalted butter or coconut oil

Wet ingredients

  • 1 cup unsweetened applesauce or mashed ripe banana or plain Greek yogurt
  • 0.5 cup pure maple syrup or honey
  • 0.25 cup milk of choice
  • 1 teaspoon vanilla extract
  • 2 eggs eggs

Leavening agents

  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt

Instructions 

  • Preheat oven to 375°F (190°C). Prepare muffin tin with spray or liners.
  • Toss chopped strawberries with ¼ cup flour to coat.
  • Melt butter, then mix with applesauce, maple syrup, milk, vanilla, and eggs.
  • Whisk in baking powder, baking soda, and salt. Add flours and fold in strawberries.
  • Fill muffin cups ¾ full and bake 16-18 minutes. Cool before serving.
