Ingredients

Wet ingredients

  • 1 cup quick-cooking oats (uncooked)
  • 1/2 cup brown sugar (packed)
  • 1 cup Greek yogurt (OR light sour cream)
  • 1/3 cup oil
  • 1 egg beaten egg
  • 1 teaspoon vanilla extract

Dry ingredients

  • 1 cup all-purpose flour (plus some extra for strawberries)
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup chopped strawberries

Instructions 

  • Preheat oven to 400°F (200°C) and line a 12-cup muffin pan with liners.
  • Mix wet ingredients: oats, sugar, yogurt, oil, egg, vanilla; set aside 5 minutes.
  • Combine dry ingredients: flour, salt, baking powder, baking soda.
  • Toss strawberries in flour; fold into batter with minimal stirring.
  • Divide batter into muffin cups and bake 20 minutes; cool before serving.

Notes

For best results, use fresh strawberries and do not overmix the batter.
