A flavorful and hearty bowl combining roasted sweet potatoes, seasoned ground beef, and smoky street corn, topped with fresh herbs and creamy dressing.

Ingredients

Vegetables

  • 1.5 lbs sweet potatoes (peeled & cut into 1-inch pieces)
  • 5 tablespoons olive oil (divided)
  • 1 teaspoon paprika (divided)
  • 0.75 teaspoon garlic powder
  • Salt and pepper Salt and pepper
  • 1 pound lean ground beef (93/7)
  • 1 packet taco seasoning (1-ounce packet plus water)
  • 12 ounces fire-roasted corn (frozen or regular)
  • 2 teaspoons minced garlic
  • teaspoon minced jalapeño (optional)
  • 0.25 cup finely chopped cilantro
  • 0.25 cup finely chopped green onions
  • 1 large lime (1-1/2 tbsp juice)
  • 3 tablespoons mayo
  • 3 tablespoons sour cream
  • 0.25 teaspoon chili powder
  • 0.125 teaspoon ground cumin
  • 1 large ripe avocado (diced)

Cheese

  • Cotija cheese or Queso Fresco Cotija cheese or Queso Fresco

Toppings

  • Tortilla chips Tortilla chips (for serving)
  • Tajin Tajin (sprinkled over everything if desired)

Instructions 

  • Preheat oven to 400°F. Roast sweet potatoes with oil and spices for 25-30 minutes until tender and charred.
  • Cook corn in a hot skillet with oil until browned, then add garlic and cook briefly. Cool and mix with cilantro, green onions, jalapeño, and dressing.
  • Cook ground beef with taco seasoning and water until fully browned and saucy.
  • Assemble bowls: divide roasted sweet potatoes, top with beef, corn mixture, diced avocado, cheese, and optional toppings. Serve with tortilla chips and sprinkle Tajin if desired.

Adjust seasonings to taste and serve immediately for best flavor.
