Instructions
Preheat oven to 400°F. Roast sweet potatoes with oil and spices for 25-30 minutes until tender and charred.
Cook corn in a hot skillet with oil until browned, then add garlic and cook briefly. Cool and mix with cilantro, green onions, jalapeño, and dressing.
Cook ground beef with taco seasoning and water until fully browned and saucy.
Assemble bowls: divide roasted sweet potatoes, top with beef, corn mixture, diced avocado, cheese, and optional toppings. Serve with tortilla chips and sprinkle Tajin if desired.
