Delicious homemade cheese buns with a soft, elastic texture and flavorful herbs, perfect for a snack or meal.

Ingredients

Dough

  • 50 g Japan High Gluten Flour
  • 50 g boiling water
  • 200 g Japan High Gluten Flour
  • 2.4 g instant yeast (3/4 tsp)
  • 15 g brown sugar
  • 2.5 g salt (1/2 tsp)
  • 10 g butter
  • 130 g milk
  • 200 g Mozzarella Cheese Block (cut into 20-25g cubes or shredded and compressed into balls)
  • optional Dried oregano leaves and basil leaves (optional)
  • 1 Tbsp water (for egg wash)

Instructions 

  • Mix bread flour with boiling water until well combined, then refrigerate for at least 4 hours or overnight.
  • Combine all ingredients except butter and knead with paddle, then switch to hook and knead until dough is elastic and smooth, adding butter gradually.
  • Let the dough rise in a warm place for 45-60 minutes until doubled, then punch down and divide into 8 portions (~57g each). Shape into balls, flatten, and place cheese in the center, sealing well.
  • Arrange buns on lined baking tray, let rise for 30-45 minutes until about 80% increased in size, then brush with egg wash and sprinkle herbs.
  • Bake at 190°C for 12-15 minutes until golden brown, then cool on a rack.

Notes

Ensure the cheese is well sealed inside the dough to prevent leakage during baking.
