50gJapan High Gluten Flour
50gboiling water
200gJapan High Gluten Flour
2.4ginstant yeast(3/4 tsp)
15gbrown sugar
2.5gsalt(1/2 tsp)

130gmilk
200gMozzarella Cheese Block(cut into 20-25g cubes or shredded and compressed into balls)
optionalDried oregano leaves and basil leaves(optional)
1Tbspwater(for egg wash)

Instructions
Mix bread flour with boiling water until well combined, then refrigerate for at least 4 hours or overnight.
Combine all ingredients except butter and knead with paddle, then switch to hook and knead until dough is elastic and smooth, adding butter gradually.
Let the dough rise in a warm place for 45-60 minutes until doubled, then punch down and divide into 8 portions (~57g each). Shape into balls, flatten, and place cheese in the center, sealing well.
Arrange buns on lined baking tray, let rise for 30-45 minutes until about 80% increased in size, then brush with egg wash and sprinkle herbs.
Bake at 190°C for 12-15 minutes until golden brown, then cool on a rack.
