Ingredients

Bread

  • 10 cups whole wheat bread, chopped into cubes (loosely packed)
  • 4 tablespoons olive oil
  • 1 cup chopped celery
  • 1 yellow onion chopped
  • 1 tablespoon thyme
  • 1 tablespoon sage
  • 400 g chopped sausage meat
  • 30 g pumpkin and sunflower seeds
  • 1 apple peeled and finely chopped
  • 2 cups chicken stock (low sodium)
  • ½ cup milk
  • 3 large eggs
  • 1 cup dried cranberries

Instructions 

  • Preheat oven to 180°C and prepare a 12-cup muffin tin with cooking spray.
  • Bake bread cubes for 15 minutes, then transfer to a large bowl.
  • Sauté onion and celery in oil until soft, then add sausage and cook until browned.
  • Blend sausage mixture with bread, apple, and sage. Mix stock, milk, and eggs separately, then combine.
  • Mix everything, add cranberries and seeds, then spoon into muffin tin, pressing down to compact.
  • Bake for 25 minutes until tops are golden, then cool for 10 minutes before serving.

Notes

Ensure not to overmix to keep muffins light and fluffy.
