Ingredients

Dry ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Wet ingredients

  • 3 large eggs
  • 115 g unsalted butter, softened
  • 2 teaspoons vanilla extract
  • 1/2 cup milk

Filling and topping

  • 2 cups fresh mixed berries
  • 2 cups whipped cream

Additional decoration

  • Additional fresh berries for decoration (as needed)
  • Mint leaves optional for garnish

Instructions 

  • Preheat oven to 350°F (175°C). Grease two 9-inch pans and line with parchment.
  • Cream butter and sugar until fluffy. Add eggs one at a time, then vanilla.
  • Mix dry ingredients. Alternately add dry mix and milk to wet, then fold in berries.
  • Divide batter into pans, bake 25-30 mins. Cool completely.
  • Whip cream until stiff. Layer cakes with whipped cream and berries. Decorate with extra berries and mint.
