These delicious bites combine sweet, salty, and nutty flavors in a quick, no-bake treat perfect for snacking or sharing.

Ingredients

Pretzels and oats

  • 1 1/2 cups pretzels or pretzel sticks (gluten free)
  • 1 cup rolled oats (gluten free)
  • 1/2 cup unsweetened coconut (or more oats)

Peanut butter and liquids

  • 1/2 cup natural peanut butter (can sub other nut/seed butters)
  • 1/4 cup pure maple syrup (can sub honey or agave)
  • 3 Tbsp coconut oil (or more nut/seed butter)

Seeds and flavoring

  • 2 Tbsp chia seeds (or flax seeds)
  • 1/2 tsp vanilla extract
  • 1/4 cup chocolate chips (dairy free)

Instructions 

  • Pulse pretzels and oats 4-5 times in a blender or food processor, or crush in a zip-top bag with a rolling pin.
  • Mix peanut butter, syrup, coconut oil, chia seeds, and vanilla in a bowl. Fold in pretzel/oat mixture, coconut, and chocolate chips until combined.
  • Roll mixture into 1-inch balls and place on parchment-lined plate. Refrigerate for 10-15 minutes until firm.
  • Store in an airtight container in the fridge for up to 1 week or freeze for up to 1 month.

For best texture, keep refrigerated and enjoy within a week.
