Ingredients

Protein

  • 1 lb Chicken thighs (Use boneless and skinless for easier preparation.)

Grain

  • 2 cups Rice (Jasmine or basmati recommended.)

Sauce

  • 0.5 cup Sweet chili sauce (For coating the chicken.)
  • 1 tbsp Soy sauce (Can substitute with tamari for gluten-free.)

Aromatics

  • 2 cloves Garlic (Minced.)
  • 1 tbsp Ginger (Grated.)

Vegetables

  • 2 cups Vegetables (Bell peppers and broccoli work well.)

Garnish

  • 2 tbsp Green onions (For garnish.)
  • 1 tbsp Sesame seeds (Optional for garnish.)

Instructions 

  • Cook rice according to package instructions.
  • Cut chicken into bite-sized pieces and toss with sweet chili sauce and soy sauce.
  • Heat a pan and cook chicken until browned and cooked through, about 8-10 minutes.
  • In the same pan, sauté vegetables until tender, about 5 minutes.
  • Assemble bowls with rice, chicken, vegetables, and garnish with green onions and sesame seeds.

Notes

For extra flavor, add a squeeze of lime or a drizzle of additional chili sauce.
