A quick and flavorful stir fry combining tender chicken with vibrant vegetables and a sweet chili sauce for a perfect weeknight dinner.

boneless, skinless chicken breast, thinly sliced

sweet chili sauce

tablespoon
low-sodium soy sauce

tablespoon
extra virgin olive oil
Vegetables

red bell pepper, sliced into thin strips

yellow bell pepper, sliced into thin strips

fresh broccoli florets

cloves
garlic, minced

fresh ginger, peeled and grated

green onions, finely chopped

toasted sesame seeds

Instructions
Combine chicken with chili sauce, soy sauce, salt, and pepper. Marinate for 15 minutes.
Heat oil in a large skillet over medium-high heat. Cook chicken until golden and cooked through, about 5-7 minutes. Remove and set aside.
Add garlic and ginger to the skillet; sauté for 30 seconds until fragrant.
Add vegetables; stir-fry for 3-4 minutes until tender but crisp. Return chicken to skillet, add remaining marinade, and cook for 2 minutes.
Remove from heat, sprinkle with green onions and sesame seeds. Serve hot.
Notes
For extra flavor, garnish with additional sesame seeds or chopped peanuts.
