A quick and flavorful stir fry combining tender chicken with vibrant vegetables and a sweet chili sauce for a perfect weeknight dinner.

Ingredients

Protein

  • 1 lb boneless, skinless chicken breast, thinly sliced
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon low-sodium soy sauce
  • 1 tablespoon extra virgin olive oil

Vegetables

  • 1 unit red bell pepper, sliced into thin strips
  • 1 unit yellow bell pepper, sliced into thin strips
  • 1 cup fresh broccoli florets
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, peeled and grated
  • 2 unit green onions, finely chopped
  • 1 tablespoon toasted sesame seeds
  • to taste unit salt and freshly ground black pepper

Instructions 

  • Combine chicken with chili sauce, soy sauce, salt, and pepper. Marinate for 15 minutes.
  • Heat oil in a large skillet over medium-high heat. Cook chicken until golden and cooked through, about 5-7 minutes. Remove and set aside.
  • Add garlic and ginger to the skillet; sauté for 30 seconds until fragrant.
  • Add vegetables; stir-fry for 3-4 minutes until tender but crisp. Return chicken to skillet, add remaining marinade, and cook for 2 minutes.
  • Remove from heat, sprinkle with green onions and sesame seeds. Serve hot.

Notes

For extra flavor, garnish with additional sesame seeds or chopped peanuts.
