A quick and flavorful stir fry combining tender chicken with vibrant vegetables and a sweet chili sauce.

Ingredients

Protein

  • 1 pound boneless skinless chicken breasts

Oil

  • 1/4 cup avocado oil

Vegetables

  • 1 small onion
  • 2 small heads broccoli
  • 2 large carrots
  • 4 cloves garlic
  • 3 small zucchini

Thickener

  • 1 tsp tapioca starch

Sauce

  • 1/4 cup coconut aminos
  • 1 tbsp sambal oelek chili paste
  • 2-4 tbsp honey

Instructions 

  • Slice chicken into strips and season if desired.
  • Heat avocado oil in a wok or large skillet over medium-high heat.
  • Add chicken and cook until browned and cooked through, about 5-7 minutes.
  • Add chopped vegetables and garlic; stir-fry for 5-7 minutes until tender-crisp.
  • Mix coconut aminos, chili paste, honey, and tapioca starch; pour over stir fry and cook for 2-3 minutes until sauce thickens.

Notes

Adjust honey and chili paste to taste for sweetness and spice.
