Ingredients

Sweet Potatoes

  • 2 medium sweet potatoes, cubed
  • 2 tablespoons olive oil, divided
  • 1 teaspoon kosher salt, divided
  • 0.5 teaspoon black pepper, divided
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground cumin

Ground Beef

  • 1 pound lean ground beef

Vegetables

  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 0.5 teaspoon dried oregano
  • 1 tablespoon apple cider vinegar
  • 1 cup baby spinach
  • 1 tablespoon olive oil for finishing

Instructions 

  • Preheat oven to 425°F and line a baking sheet.
  • Toss sweet potatoes with olive oil, salt, pepper, paprika, and cumin; roast 25-30 minutes.
  • Sauté onion in olive oil until soft, add garlic, then cook ground beef until browned.
  • Stir in tomato paste, oregano, salt, pepper, and vinegar; fold in spinach until wilted.
  • Assemble bowls with sweet potatoes and beef mixture; serve warm or store.

Notes

For extra flavor, add a squeeze of lime or a sprinkle of cheese before serving.
