free range organic boneless chicken breasts
Fresh parsley (chopped for garnishing)

Instructions
Poach chicken in boiling water with salt for 15 mins, then shred.
Heat olive oil in a large pot, sauté onions, celery, and carrots for 5-7 mins.
Add garlic and cook for 30 seconds, then add broth, sweet potatoes, and spices. Bring to a boil.
Simmer for 10-15 mins until sweet potatoes are soft, then add shredded chicken to rewarm.
Taste and adjust seasonings, add cayenne if desired. Garnish with parsley before serving.
Notes
For extra flavor, add a squeeze of lemon or a dash of hot sauce.
