A hearty and flavorful soup combining tender chicken, sweet potatoes, and aromatic spices, perfect for a comforting meal.

Ingredients

Vegetables

  • 2 tablespoon olive oil
  • 1 cup white or yellow onions (diced)
  • 1 cup celery (chopped)
  • 2 cups carrot (diced)
  • 3 cloves garlic (minced)

Broth & Spices

  • 5 cups chicken broth
  • 3 cups sweet potato (diced)
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 1 teaspoon ground coriander
  • Kosher salt and fresh ground black pepper
  • 1 lb free range organic boneless chicken breasts
  • Fresh parsley (chopped for garnishing)
  • pinch optional cayenne pepper

Instructions 

  • Poach chicken in boiling water with salt for 15 mins, then shred.
  • Heat olive oil in a large pot, sauté onions, celery, and carrots for 5-7 mins.
  • Add garlic and cook for 30 seconds, then add broth, sweet potatoes, and spices. Bring to a boil.
  • Simmer for 10-15 mins until sweet potatoes are soft, then add shredded chicken to rewarm.
  • Taste and adjust seasonings, add cayenne if desired. Garnish with parsley before serving.

Notes

For extra flavor, add a squeeze of lemon or a dash of hot sauce.
