Ingredients

Chicken

  • 2.5 cups cooked shredded chicken (about 1 lb boneless skinless chicken breast, cooked)

Vegetables and seasonings

  • 1 cup diced red bell peppers
  • 0.5 cup cooked black beans (rinsed and drained)
  • 0.5 cup corn
  • 1 can diced green chiles (4 oz can)

Dairy and seasonings

  • 0.5 cup plain nonfat Greek yogurt
  • 2 tablespoons lime juice (from 1 large lime)
  • 1 tablespoon taco seasoning
  • 1 tablespoon finely chopped fresh cilantro (optional)

Instructions 

  • Cook the chicken by boiling for 10-14 minutes, then shred with forks.
  • Combine shredded chicken, bell peppers, black beans, corn, green chiles, yogurt, lime juice, taco seasoning, and cilantro in a bowl.
  • Mix thoroughly until all ingredients are well combined.
  • Serve on a sandwich, over a salad, or enjoy as is.
