A delicious and healthy twist on tacos, these stuffed sweet potatoes are easy to prepare and perfect for a quick dinner.

Ingredients

Meat and Seasonings

  • 1 pound lean ground beef
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 packet taco seasoning
  • 1 cup chunky salsa
  • 0.25-0.5 cup water (Adjust as needed)

Sweet Potatoes

  • 4 medium sweet potatoes (about 12-14 ounces each)

Toppings

  • to taste shredded Mexican blend cheese
  • to taste diced tomato
  • to taste diced avocado or guacamole
  • to taste sour cream

Instructions 

  • Cook ground beef, onion, and garlic in a skillet until browned. Add taco seasoning and salsa, then simmer with water until thickened.
  • Poke holes in sweet potatoes and microwave on high for 8-10 minutes, turning halfway. Let cool slightly, then slice and fluff inside.
  • Fill sweet potatoes with taco meat and top with cheese, tomato, avocado, guacamole, or sour cream as desired. Serve immediately.
