Enjoy flavorful grilled chicken skewers coated in a rich homemade teriyaki sauce, perfect for a quick and delicious meal.

Ingredients

Chicken

  • 2 lbs chicken thighs (or breasts) (cut into 1" cubes)
  • 2 tbsp cornstarch
  • 1 cup water
  • 1/3 cup brown sugar
  • 1/3 cup soy sauce (*low sodium recommended )
  • 2 cloves garlic (minced )
  • 1 tbsp rice vinegar
  • 1/2 tbsp fresh ginger (minced )
  • 1 tbsp honey
  • 1/2 tsp sesame oil
  • 8 skewers skewers
  • sesame seed (for garnish)
  • chopped green onion (for garnish)

Instructions 

  • Combine cornstarch and water; add remaining ingredients and simmer until thickened. Cool completely.
  • Marinate chicken in half of the cooled sauce for at least 30 minutes.
  • Thread chicken onto skewers and grill over medium heat, turning every 3-4 minutes.
  • Cook until internal temperature reaches 165°F (74°C), about 20-30 minutes, basting with remaining sauce during last few turns.
  • Remove from grill, garnish with chopped green onion and sesame seeds, and serve.

Notes

For extra flavor, marinate the chicken longer or brush with additional sauce during grilling.
