A flavorful and quick Thai-inspired dish featuring tender chicken, fresh vegetables, and creamy peanut sauce tossed with rice noodles.

Ingredients

Noodles

  • 200 g rice noodles
  • 250 g chicken breast, thinly sliced
  • 1 medium red bell pepper, julienned
  • 1 medium carrot, julienned
  • 1 cup snap peas, trimmed
  • 3 medium green onions, chopped
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 0.5 cup creamy peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 teaspoon sriracha
  • to taste salt and pepper
  • for garnish chopped peanuts and fresh cilantro

Instructions 

  • Cook rice noodles in boiling water until al dente, then drain and rinse with cold water.
  • Mix peanut butter, soy sauce, honey, lime juice, and sriracha to make the sauce.
  • Sauté chicken in oil until cooked, then set aside.
  • Sauté garlic, ginger, and vegetables until tender-crisp.
  • Combine noodles, chicken, and vegetables; toss with sauce and heat through.
  • Garnish with chopped peanuts, cilantro, and green onions before serving.

Notes

Adjust seasoning to taste and serve immediately for best flavor.
