Deliciously spiced pumpkin muffins perfect for the Thanksgiving season, moist and fluffy with a hint of sweetness.

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon

Wet Ingredients

  • 2 large eggs
  • 1/2 cup vegetable oil

Instructions 

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, mix together the flour, sugar, baking soda, baking powder, cinnamon, and salt.
  • In another bowl, whisk together the pumpkin puree, eggs, and vegetable oil.
  • Combine the wet and dry ingredients until just mixed.
  • Fill the muffin cups about 2/3 full and bake for 20 minutes or until a toothpick comes out clean.
  • Let cool for a few minutes before transferring to a wire rack.

Notes

For added flavor, consider mixing in chocolate chips or nuts before baking.
