Ingredients

Dough

  • 1/2 cup softened butter
  • 1/2 cup white granulated sugar
  • 1/2 cup brown sugar
  • 2 tsp vanilla extract
  • 1 large egg
  • 1 3/4 cups all purpose Gluten free flour
  • 1/2 tsp sea salt
  • 1 tsp baking soda
  • 1 tbsp hot water
  • 1.5 cups chocolate chips

Instructions 

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Cream together butter, white sugar, and brown sugar. Add egg and vanilla, mix well.
  • Mix flour, baking soda, and salt. Gradually add to wet ingredients, then stir in hot water and chocolate chips.
  • Scoop dough onto baking sheet, spacing 2 inches apart. Bake for 8-9 minutes.
  • Cool cookies on sheet for 2 minutes, then transfer to wire rack.

Notes

For extra chewy cookies, slightly underbake and let sit for a few minutes before transferring.
