Ingredients

Dry Ingredients

  • 1.75 cups all purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground ginger

Wet Ingredients

  • 1 cup pumpkin puree (make sure it's not pumpkin pie filling)
  • 2 large eggs (at room temp)
  • 0.5 cup granulated sugar
  • 0.33 cup vegetable oil
  • 0.25 cup milk
  • 1 teaspoon vanilla extract

Instructions 

  • Preheat oven to 375°F and line muffin tin.
  • Mix dry ingredients in a medium bowl.
  • Whisk wet ingredients in a larger bowl until combined.
  • Combine dry and wet ingredients gently.
  • Spoon mixture into muffin tin, filling 2/3 full.
  • Bake for 18-22 minutes until a toothpick comes out clean.
