A cheesy, savory hashbrown casserole with sausage and vegetables, perfect for breakfast or brunch.

30ozfrozen shredded hashbrown potatoes(thawed)
3cupsdiced smoked sausage
1cupdiced yellow onion
1/2cupdiced red bell pepper
2-3Tbspcanned diced green chiles(drained)
4Tbspbutter
4Tbspall purpose flour
2cupswhole milk
2cupschicken stock or broth
4cupsshredded medium cheddar cheese(divided)
1cupsour cream
1tspkosher salt
1/2tspblack pepper
1/2tspgarlic powder
to tasteminced fresh parsley or chives(for garnish (optional))
Instructions
Preheat oven to 350°F (175°C). Spray a 3 qt baking dish with non-stick spray.
Cook sausage until browned, then add to a large bowl with hashbrowns. Sauté onion and bell pepper, then add to bowl with green chiles.
Make cheese sauce: melt butter, whisk in flour, then gradually add milk and broth, simmer until thickened. Stir in 3 cups cheese, sour cream, salt, pepper, and garlic powder.
Combine cheese sauce with potato mixture, transfer to baking dish, sprinkle with remaining cheese, and bake for 45-50 minutes until bubbly and golden.
Notes
For a crisp top, broil for an additional 2-3 minutes before serving.
