Ingredients

Canned Goods

  • 1 can chickpeas, drained and rinsed
  • 1 diced bell pepper
  • 1 diced zucchini
  • 1 sliced carrot
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper Salt and pepper
  • for garnish Fresh parsley Fresh parsley

Instructions 

  • Preheat oven to 400°F (200°C).
  • Toss chickpeas and vegetables with olive oil and spices.
  • Spread on a baking sheet and roast for 25-30 minutes.
  • Garnish with chopped parsley and serve warm.
