A deliciously indulgent bread pudding with apple and cinnamon flavors, topped with a creamy protein sauce.

Ingredients

Bread and Fruits

  • 227 g crusty whole wheat bread (cut into 2 inch squares)
  • 1.5 cups home made coconut milk (or other milk of your choice)
  • 1.5 cups unsweetened applesauce
  • 2 whole eggs lightly beaten eggs
  • 1 tbsp ground cinnamon
  • 1 tsp freshly grated nutmeg
  • 1 red apple Red Delicious apple (peel on, finely diced)
  • 0.5 cups raisins
  • 0.25 cups walnuts
  • 3 scoops vanilla flavored whey protein powder
  • 0.25 cups fat free plain Greek yogurt
  • 0.25 cups home made coconut milk (or other milk of your choice)

Instructions 

  • Mix coconut milk, applesauce, eggs, cinnamon, and nutmeg until well combined.
  • Fold in bread, walnuts, apple, and raisins. Cover and refrigerate for at least 1 hour.
  • Preheat oven to 350°F (175°C). Bake for 45-50 minutes until set and golden.
  • Prepare the sauce by mixing protein powder, yogurt, and milk until smooth. Rest for 1 minute and stir again.
  • Pour sauce over cooled bread pudding and serve cold. Store leftovers in the fridge for up to 5 days.

Notes

This pudding is best served cold and can be stored for several days.
