A quick and delicious pasta dish combining tender chicken, fresh spinach, and cherry tomatoes for a satisfying meal.

Ingredients

Pasta

  • 8 ounces penne pasta

Chicken

  • 1 pound boneless, skinless chicken breasts, diced

Vegetables

  • 2 cups fresh spinach, washed and chopped
  • 1 cup cherry tomatoes, halved

Aromatics & Seasonings

  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)

Oils & Dairy

  • 2 tablespoons olive oil
  • ¼ cup grated Parmesan cheese

Salt & Pepper

  • to taste Salt and pepper

Instructions 

  • Cook pasta in salted boiling water until al dente, then drain.
  • In a large pan, heat olive oil and cook diced chicken until browned, about 5-7 minutes.
  • Add garlic, cook 1-2 minutes, then stir in tomatoes and spinach; cook until wilted, 3-4 minutes.
  • Mix in Italian seasoning and red pepper flakes, then add cooked pasta and toss.
  • Remove from heat, stir in Parmesan cheese, and serve hot.

Notes

Feel free to add extra Parmesan or red pepper flakes for more flavor.
