A hearty and flavorful skillet dish combining ground turkey, roasted butternut squash, and melted gruyère cheese, perfect for a cozy meal.

Ingredients

Meat

  • 1 lb ground turkey
  • 1 cup cubed butternut squash (about 3 cups)
  • 0.5 cup vegetable broth
  • 1 tbsp olive oil
  • 1 small white onion (diced)
  • 2 cloves garlic (minced or pressed)
  • 1 red bell pepper chopped red bell pepper
  • to taste salt and pepper
  • 1 tsp smoked paprika
  • 0.75 cup gruyère cheese
  • fresh cilantro and parsley for garnish

Instructions 

  • Heat olive oil in a skillet. Add ground turkey, onion, garlic, and bell pepper; cook until meat is no longer pink.
  • Add butternut squash and vegetable broth; cover and simmer for 12 minutes until squash softens.
  • Remove from heat, top with gruyère cheese, and bake at 400°F for 5 minutes until cheese melts.
  • Garnish with fresh cilantro and parsley, then serve.

Notes

For extra flavor, add a pinch of chili flakes or a squeeze of lemon before serving.
