Instructions
Heat olive oil in a skillet. Add ground turkey, onion, garlic, and bell pepper; cook until meat is no longer pink.
Add butternut squash and vegetable broth; cover and simmer for 12 minutes until squash softens.
Remove from heat, top with gruyère cheese, and bake at 400°F for 5 minutes until cheese melts.
Garnish with fresh cilantro and parsley, then serve.
Notes
For extra flavor, add a pinch of chili flakes or a squeeze of lemon before serving.
