A warm, savory-sweet sandwich combining turkey, brie, and cranberry sauce on toasted bread, perfect for a quick lunch or cozy dinner.

Ingredients

Bread

  • 4 slices sprouted grain bread (such as Ezekiel bread (if frozen, thaw before preparing))

Meat

  • 6 oz white meat turkey breast (about 6 thin slices)

Condiments

  • 4 tsp dijon mustard

Cheese

  • 50 g brie cheese with rind (about 8 thin slices)

Sauces

  • 4 tbsp cranberry sauce

Oils & Seasonings

  • 1 tbsp EVOO
  • to taste salt and pepper salt and pepper

Optional Greens

  • a small handful arugula or fresh baby spinach (optional)

Instructions 

  • Preheat panini maker or skillet over medium-high heat.
  • Spread 1 tsp dijon mustard on each bread slice.
  • Assemble sandwiches with brie, turkey, cranberry sauce, and greens if desired; top with remaining brie slices.
  • Brush sandwiches with olive oil and cook until cheese is melted and bread is toasted, about 5-7 minutes.
  • Serve warm and enjoy!

Notes

For a crispier sandwich, press in a panini maker or use a heavy skillet.
