Ingredients

Meat

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon pepper
  • ¼ cup all-purpose flour
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon chili powder
  • ½ teaspoon onion powder
  • ¼ teaspoon oregano
  • ¼ teaspoon paprika
  • 1 can (14.5 oz) beef broth
  • 1 can (8 oz) tomato sauce
  • 1 can (15 oz) black beans (drained & rinsed)
  • 1 cup frozen corn
  • to taste cooked rice (for serving)

Taco Toppings

  • as needed shredded lettuce, cheese, pico de gallo, chopped tomatoes, avocado slices, guacamole, olives, lime, jalapenos, etc.

Instructions 

  • Cook ground turkey with olive oil, salt, and pepper until no longer pink. Drain excess grease.
  • Add spices and flour; stir for 1 minute.
  • Gradually whisk in beef broth until thickened, then add tomato sauce and bring to a boil.
  • Stir in black beans and corn, then simmer for 20 minutes until thickened.
  • Serve over rice and top with your favorite taco toppings.
