A flavorful and easy-to-make bowl combining seasoned ground turkey, fluffy rice, fresh pico de gallo, and creamy avocado slices for a satisfying meal.

Ingredients

Produce

  • 1 piece avocado
  • 1 cup basmati rice
  • 1 small bunch cilantro
  • 1 pint grape tomatoes
  • 1.5 lb ground turkey
  • 1 piece lime
  • 1 medium red onion
  • to taste black pepper
  • to taste chili powder
  • to taste cumin, ground
  • to taste garlic powder
  • to taste onion powder
  • to taste oregano, dried
  • to taste salt
  • as needed virgin coconut oil

Instructions 

  • Rinse rice, then cook in boiling water for 15-18 minutes. Fluff and set aside.
  • Wash produce. Quarter tomatoes, chop cilantro, juice lime, and dice onion.
  • Heat coconut oil, cook onion until softened, then add turkey and cook until browned. Add spices and cook briefly.
  • Season pico de gallo with salt and pepper. Slice avocado.
  • Assemble bowls with rice, turkey, pico de gallo, and avocado slices. Serve and enjoy!
