A fresh and healthy turkey taco salad packed with flavorful ingredients and easy to prepare for a quick, nutritious meal.

Ingredients

Meat

  • 1 pound ground turkey
  • 4 tablespoons taco seasoning (about 1 packet)

Vegetables and Beans

  • 4 cups chopped romaine lettuce
  • 1 can 15-ounce black beans (drained and rinsed)
  • 1 cup halved grape tomatoes
  • 1 cup corn

Nuts and Dressing

  • 3/4 cup cashews (soaked in hot water for 30 minutes)
  • 3/4 cup water
  • 2 Tablespoons lime juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder

Additional Toppings

  • 1 medium avocado (sliced)
  • 1/3 cup chopped cilantro

Instructions 

  • Cook the ground turkey in a non-stick pan until browned.
  • Add taco seasoning and water; simmer for 10 minutes.
  • Blend dressing ingredients until smooth.
  • Combine lettuce, beans, tomatoes, corn, and cooked turkey in a bowl.
  • Toss salad with dressing, top with avocado and cilantro, and serve.

Notes

Feel free to adjust the amount of dressing for your taste.
